AIR LOCK NOT BUBBLING :

Don't assume anything from the Air Lock. Fermenters often leak Gas from around the Seals. Do Not over tighten, check for visual signs of fermentation,eg, Condensation under lid,froth around top of brew. Check specific Gravity with Hydrometer.

OFF OR SOUR BEER :

Caused by Infection prior to or during Fermentation. Always make sure all equipment is thoroughly clean and sterilised, especially the Tap in your fermenter.
